Eggplant Parmigiana & Visits from College Students

I can't believe that it is almost the weekend already. This week flew by.

The other night when we were making dinner, we had some surprise visitors. My niece and her friends were out to dinner near our house, and she sent me a text that she wanted to stop by with some friends because they wanted to see our dogs. Too bad they ate before they got here because Anthony and I were in the middle of making eggplant parmigiana. They stayed for a while, played with dogs, and chatted with us about what classes they were signing up for next semester. Our niece Alexa, and her friends love theater and have a production coming up. We can't wait to see it in a few weeks.

Alexa texted me later that evening saying that she wished she had taken me up on taking some of the eggplant parmigiana back to her dorm, and I let her know that I would make dinner for her and her friends if they wished anytime.
